Chicory Cichorium intybus
Chicory is a small woody plant native to Europe and North America with superb bright blue flowers which has given it common names such as ‘blue daisy’, ‘blue dandelion’ and ‘blue weed’. Chicory is also the common name in the United States for a plant called Curly Endive, but they are actually different plants which are often confused.
The most traditional use of this plant is the roasting of the roots to produce a coffee substitute, but the leaves are also commonly used in salad dishes. We use their delicious bitter-sweetness in After Dinner Tea and Licorice & Cinnamon Tea.
